Maridaje: Principalmente carnes rojas. Quesos grasos. Pastas con salsas fuertes.
Época de vendimia: Tercera semana de octubre.
Cosecha: Manual en cajas de 15 kg de la parcela #4 cuidadosamente seleccionadas.
Maceración: Pre-fermentativa durante 5 días. Temperatura de fermentación 28ºC
Elaboración y crianza: Fermentación en tinas de madera. Fermentación malolactica en barrica nueva de roble francés durante 14 meses
