Todo el vino se ha elaborado teniendo cuidado de que fuera levadura autóctona, una parte ha sido fermentado en depósitos de piedra (S. XII), y el resto en barricas de roble y inoxidable. Todo el vino ha tenido una crianza en barrica de unos 12 meses. Al vino nunca ha habido ninguna adición de sulfitos ni ningún tipo de antioxidante. Este vino puede desarrollar sedimentos, debido a la falta de clarificación. Debido a la no presencia de sulfitos hay que conservarlo en condiciones frescas a fin de evitar evoluciones no deseadas. Gracias a su acidez tendrá un envejecimiento mejor que la media de vinos naturales, siempre y cuando se guarde en condiciones y temperaturas adecuadas.
