Fermentación controlada del mosto hasta llegar a obtener un producto con un elevado grado alcohólico natural, manteniendo algunos azúcares naturales residuales. Los vinos obtenidos se envejecen según el método de sol y serena en barriles de 300 litros, de roble. Todos ellos contienen bases de vinos viejos, las llamadas «madres». Se sigue el proceso tradicional de envejecimiento en SOLERA, también. El proceso de envejecimiento en solera a sol y serena provoca una oxidación más o menos rápida del producto, obteniendo unos vinos con el típico gusto de oxidación y color rojo-marrón con un poco de azúcar residual.
