Procede de la bota número 6, que envejece adquiriendo un color ámbar, con una nariz fragante y sugerente, y aromas de frutos secos y flores secas. En boca tiene una sensación untuosa e intensa con una gran complejidad y recuerdos como orejones, cuero fino y especias como el clavo. Antiguamente, las «palmas» distinguían aquellos vinos jerezanos de extraordinaria elegancia y González Byass recuperó hace unos años esta tradición.
