Didier Mariotti y su equipo de enólogos son los responsables de perpetuar, año tras año, la firma de la Casa. Ello requiere una larga experiencia y una buena dosis de talento. Tienen 77 variedades de uva entre las que elegir, cada una de ellas única. La singularidad de los viñedos se refleja en el coupage final: predominio de pinot noir, una fuerte presencia de chardonnay y un toque de pinot meunier. Para completar la unión y garantizar la coherencia estilística, el maestro de bodega añade entre un 25 y un 30% de vinos de reserva, lo que aporta una mayor complejidad y profundidad al coupage final. Tras varios años de envejecimiento, el ligero y equilibrado dosaje expresa la identidad de la cuvée, encarnando tanto el carácter del terruño como el talento del elaborador.
