Eulogio Pomares se ha posicionado como uno de los enólogos referentes de Galicia. Después de triunfar en la bodega familiar Zárate, en su proyecto personal elabora vinos parcelarios con vinificaciones que rompen la norma. Su Castiñeiro Albariño está elaborado con uvas de la parcela Castiñeiro, de solo 0,3 hectáreas, situada en el Val do Salnés (Pontevedra). El mosto fermentó en ánforas de arcilla blanca y permaneció sobre sus lías finas durante 6 meses sin batônnage. Un blanco delicioso de producción limitada a tan solo 1.509 botellas.
