La historia vitícola de Willi Schaefer se remonta a la famosa zona alemana del Mosel, en Graach cerca de Bernkastel. Actualmente, Christoph Schaefer dirige la parte enológica de la bodega y su esposa Andrea se encarga de los trabajos en el viñedo. Elaboran blancos con la variedad riesling –y la mínima intervención posible– cultivada sobre el característico suelo pizarroso de la zona. Willi Schaefer Graacher Himmelreich Spätlese es uno de sus fantásticos riesling elaborado a partir de las dos hectáreas del viñedo de Graacher Himmelreich, donde se retrasó la fecha de la vendimia para concentrar el azúcar en el racimo. Los vinos de la bodega son elegantes, cristalinos, brillantes, llenos de carácter, intensos, complejos y con una buena guarda.
