La bodega Pio Cesare fue fundada en 1881 y hoy es la única que permanece en funcionamiento en Alba, la capital de las Langhe. A esta histórica bodega, y a la figura de Pio Cesare en particular, se le reconoce el mérito de haber sido una de las primeras, allá por la segunda mitad del siglo XIX, en reconocer el gran potencial de los vinos de esta región, con los Barolo y Barbaresco en la cima de todos ellos. El Barolo de Pio Cesare es un producto clásico con un guiño de modernidad: como marca la tradición, sus uvas proceden de los viñedos de Serralunga d'Alba, Grinzane Cavour, La Morra, Barolo, Novello, Castiglione Falletto y Monforte. Tras una larga fermentación el vino madura durante tres años en barricas de roble francés pero también en botas de gran capacidad, lo cual supone una innovación en el proceso tradicional. El resultado es un vino equilibrado, caracterizado por taninos firmes pero moderados, y una interpretación franca y directa de la extraordinaria nebbiolo. En nariz conquista el juego entre notas dulces, de ciruelas secas y mermeladas, y las notas más frescas, balsámicas y de regaliz. En boca se muestra fino, limpio y persistente, con un trago accesible y extraordinariamente saciante.
