Este Morgon de Jean Foillard crece en uno de los mejores rincones del Beaujolais, la Côte du Py, donde las cepas de uva gamay crecen sobre suelos de un volcán extinto. Los racimos enteros de uvas permanecen durante un par de semanas a baja temperatura antes de empezar a fermentar de manera espontánea. Se evita el uso de bombas, cualquier tipo de corrección y el vino envejece en viejas botas del Domaine de la Romanée-Conti. Sus aromas son muy nítidos, con la fruta fresca (cerezas y frambuesas) y una profunda mineralidad como actores principales; con algo más de tiempo en la copa, afloran ligeros recuerdos herbáceos muy elegantes. En boca, resulta sedoso y elegante de principio a fin, pero un centro de profundidad mineral nos recuerda que no estamos ante un vino cualquiera. Sus taninos son sutiles y la acidez finísima, fluye sin pesar, llevándonos a un final complejo y repleto de distinción. Para la crianza sólo se emplean barricas usadas, con muy poco aporte tánico. La madera nueva dominaría la estructura y aromas del vino.
