En 2001, gracias a sus conocimientos y experiencia, decidió trasladarse a Beaune. Hoy, Philippe Pacalet House trabaja en más de 10 hectáreas de viñedos en Borgoña para las que tiene contratos para comprar la cosecha y hace la misma cosecha.
