El vipansit es un extraordinario vino naturalmente dulce, o lo que es lo mismo, un vino que obtiene todo su dulzor del azúcar de las uvas de que proviene. Se elabora con uvas blancas ligeramente pasificadas que reposaron sobre paja durante 2 o 3 meses hasta alcanzar una graduación probable superior a los 20 grados. El mosto obtenido fermenta a temperatura controlada de manera pausada hasta obtener la graduación deseada; el azúcar sin fermentar es el que añade de manera totalmente natural el dulzor al vino. Al verterlo en la copa se perciben aromas de cítricos confitados, piel de mandarina y pétalos de flor blanca. Una inusual acidez lo conduce durante todo el paso por boca hasta llegar a un final elegante, armónico y casi mágico.
