Este maravilloso vino ha sido envejecido durante 30 años con el sistema de «criaderas y solera». Bodegas Hidalgo La Gitana se fundó en 1792 por Roque Verjano, y fue a finales del siglo 19 cuando bajo la dirección de D. Eduardo Hidalgo Verjano, que la empresa creció para convertirse en una de las más importantes de la región y principal productora de Manzanilla. La plantación está repartida en los Pagos de Balbaina y Miraflores. La filosofía de Bodegas Hidalgo consiste en combinar los métodos tradicionales de crianza en roble americano y las más avanzadas tecnologías.
