El Pim Pam es un vino complejo, elaborado con variedades autóctonas de la zona vinícola del Penedès: Xarel.lo, Macabeo, Parellada, Malvasía de Sitges, Sumoi blanc y Garnacha blanca. Todas ellas variedades de uva blanca que Ignasi tiene plantadas en su finca. El Pim Pam se ha elaborado con sus propias lías y en depósito de acero inoxidable, resultando en una producción total de 2.522 de botellas. Es un vino representativo y libre. Por no hacer, Ignasi no le hace nada. Simplemente cuida las viñas como si fuera el heredero de 600 años de tradición vitivinícola.
