Al principio del siglo XVIII, las cepas de malvasía ocupaban una cuarta parte de la tierra que se cultivaba en el término municipal de Sitges. Con la llegada de la filoxera y la aparición del champán, el último cuarto del siglo XIX, marcaron el inicio de la decadencia de la malvasía. Consciente de que esta variedad acabaría desapareciendo del todo, poco antes de morir, el diplomático Manuel Llopis y de Casadas (1885-1935) quiso evitarlo legando al Hospital de San Juan Bautista una viña situada en Aiguadolç y también el negocio familiar de elaboración de malvasía. Gracias a este legado que hoy en día Sitges, a través de la Fundación Hospital San Juan Bautista, continúa disfrutando de este producto, el cual, hoy por hoy, es el más genuino que pueden ofrecer a sus visitantes.
