Château Grand Corbin-Despagne produce, por lo general, vinos con un 75% de merlot, un porcentaje bastante superior a lo habitual en la zona de Saint-Émilion. Las razones de esta predominancia son básicamente dos: una mayor presencia de hierro en el suelo de sus viñedos, un elemento muy favorable para el buen desarrollo de esta variedad, y la diversidad de suelos que podemos encontrar en la vasta propiedad, lo que permite a la merlot expresarse también con una mayor riqueza. El vino, Grand Corbin-Despagne, es, en pocas palabras, un vino muy masculino: potente, con taninos poderosos, una gran extracción de fruta y notas de incienso y minerales, y sobre todo mucho volumen, de los que llenan la boca. Envejece entre 18 y 21 meses en barricas 40-60% nuevas de roble francés.
