Las uvas de los racimos pueden dividirse en dos partes: los hombros y las puntas. Éstas últimas las forman las mitades inferiores de los racimos, donde se concentra la uva más fresca. En los hombros, la parte superior, se concentra la uva más madura con que se elabora este enorme tinto de mencía. Fruta golosa y carácter mineral son sus señas de identidad. Envejecido un mínimo de 12 meses en barricas de roble francés Allier y americano (33%).
