Elaborado a partir de uvas de mencía de 80 años de edad, cultivadas en un solo pago a 700 metros de altitud sobre suelos de pizarras, grafitos y arcillas. Tras su selección y despalillado grano a grano, macerará durante cuatro días en barrica nueva de 500 litros de roble francés, para luego arrancar la fermentación en la misma barrica. El vino acabará su proceso de afinamiento en barrica francesa durante 14 meses. Envejecido durante 14 meses en barricas de roble francés.
