El mosto sigue una fermentación espontánea que puede durar varios meses. Las barricas tienen un nivel de llenado superior al habitual en el Marco para que el velo de flor no tenga un impacto organoléptico excesivo que impida identificar las características que le confiere el terruño de donde procede. Un fino diferente y peculiar que se suma a los nuevos y apasionantes proyectos que están apareciendo en el Marco de Jerez.
