El Oloroso el Cerro es uno de los vinos más viejos y especiales de la Bodega Callejuela. Se trata de un vino que empezó a gestarse aún cuando Francisco Blanco gestionaba la bodega; estamos ante un vino de más de 20 años. Las uvas proceden de las viñas propias que rodean la bodega. Se embotella en rama, con un filtrado mínimo. En nariz es generoso y rico en aromas frutales (higos, dátiles y orejones), de caramelo y cera de abejas. Recuerdos de cuero, almendras tostadas y especias cálidas como la vainilla o la canela. En boca es intenso, con un equilibrio perfecto entre acidez y dulzor. Las especias se tornan más frías, recordando ahora al clavo y la pimienta. Las maderas asoman en un final tostado y sutilmente acaramelado.
