Luis Pérez la Barajuela Fino procede de un viñedo de 40 años con suelos de albariza de Barajuela, compuesta por una marga laminar que es la que da nombre al vino. El mosto sigue una fermentación espontánea que puede durar varios meses. Las barricas tienen un nivel de llenado superior al habitual en el Marco para que el velo de flor no tenga un impacto organoléptico excesivo que impida identificar las características que le confiere el terruño de donde procede. Un fino diferente y peculiar que se suma a los nuevos y apasionantes proyectos que están apareciendo en el Marco de Jerez.

The production region of D.O. Jerez-Xérès-Sherry is located in Exclusivamente Sanlúcar de Barrameda, Cádiz, España. Hasta 1964 se comercializó bajo la Denominación de Origen Jerez-Xérès-Sherry, reconociéndose posteriormente el carácter especial de la manzanilla dentro de los demás jereces.
