Los vinos de Catena Zapata han, por decirlo de algún modo, revolucionado el panorama vinícola americano desde que la bodega empezó a elaborar vinos de parcelas o viñedos muy específicos. Entre los blancos, son extraordinarios sus White Bones, White Stones y River Stones. Todavía son poco conocidos, con producciones muy limitadas pero realmente espectaculares. Estos tres vinos nacen en el viñedo Adrianna, en Gualtallary, y cada uno tiene su propia personalidad. El White Bones, que aquí nos ocupa, tiene su origen en unos suelos de naturaleza más calcárea, muestra una gran acidez y es muy refinado y perfumado. Con la madera perfectamente integrada, es especiado, con notas de frutos secos y un seductor frescor mentolado. Soberbio y sorprendente. Envejecido entre 12-16 meses en barricas de roble francés.
Las uvas para la elaboración del Chardonnay White Bones provienen de un selecto grupo de hileras plantadas en el viñedo Adrianna. El término «White Bones» (huesos blancos) hace referencia a la composición de suelo de dichas hileras, calcáreo con apariencia de restos fósiles o huesos. Fermentación: 100 % en barricas de roble francés de 225 lts y en roll-fermentors de roble francés de 500 lts. Máx. Temp. Fermentación: 16ºC por un período de 45 a 95 días. Añejamiento: 12 a 16 meses en barricas de roble con régimen de battonage. Alcohol: 12.7%. Acidez Total: 8.1 gramos/litro. pH: 3.18. Viñedo: Viñedo Adrianna, Gualtallary, Tupungato Alto, Valle de Uco, Mendoza, Argentina. Nombre de Parcela: White Bones. Superficie de Parcela: 2,2 hectáreas.
