Aunque mayoritariamente listán blanco, este vino se elabora también con distintas variedades autóctonas en pequeños porcentajes, tales como gual, marmajuelo, baboso blanco, albillo criollo, vijariego blanco y verdello. La uva listán procede de las fincas La Piñera, a 600 metros, y El Esquilón, a 450 m. y con orientación norte. Ambas, con viñedos centenarios cultivados con el sistema tradicional de cordón trenzado, de aquí el nombre del vino. Criado con sus propias lías durante un período mínimo de siete meses en barricas de 500 L de roble francés, el 50% de las cuales son nuevas, el 35% de un año, y el 25% de dos años.
