The production region of A.O.C. Sauternes is located in La región situada a 40 km al sureste de la ciudad de Burdeos, a lo largo del río Garona y su afluente, el Ciron. La fuente del Ciron es un manantial que tiene aguas más frías que el Garona. En el otoño, cuando el clima es cálido y seco, las diferentes temperaturas de los dos ríos se unen para producir niebla que desciende sobre los viñedos desde la tarde hasta la madrugada. Esta condición promueve el desarrollo del hongo Botrytis cinerea. A mediodía, el cálido sol ayudará a disipar la niebla y a secar las uvas para evitar que se pudran.
