Borja Pérez es uno de los jóvenes bodegueros que más está trabajando para dar a conocer los grandes y desconocidos vinos canarios. En Tenerife, sus dos proyectos, Artífice e Ignios Orígenes están centrados en la zona de Ycoden Daute Isora al noroeste de la isla. Entre todos sus vinos –de producciones realmente escasas– quizás el más singular y deseado sea el elaborado con la variedad baboso negro, de la que apenas existían 30 hectáreas plantadas y que él se ha encargado de recuperar desde 2011. Ignios Baboso Negro es un aroma a tierra volcánica. Precisa una decantación y 20 minutos de paciencia para ir desgranando todo el perfume de frutas negras, té, especias y tostados que atesora. En boca la textura y el sabor recuerdan la tierra. Una buena botella, con mucho carácter y personalidad y que no dejará indiferente. Envejecido durante 18 meses en barricas de roble francés.
