Las uvas de listán negro con las que se elabora este vino proceden de la parcela El Esquilón. Tras un un despalillado sin estrujado de la uva, el mosto realiza la fermentación alcohólica con levaduras autóctonas durante 14 días, con bazuqueo manual, y a una temperatura de 28º. Tras una maceración postfermentativa de 10 días, se realiza su descube a barricas nuevas de roble francés (Allier), donde se completa la fermentación maloláctica en contacto con sus lías, para una posterior crianza de un mínimo de 8 meses, embotellándose finalmente sin filtrar. Debido al escaso rendimiento de esta parcela la producción es muy limitada por añada. Envejecido durante 8 meses en barricas nuevas de roble francés (Allier).
