Lomba dos Ares es un vino de río, vinificado por parcelas y ensamblado tras la crianza. Su nombre alude a la colina que corona el conjunto de parcelas del río Bibei, donde se encuentran los viñedos de los que procede, a un altitud que varía entre los 550 y los 750 metros, bajo un clima mediterráneo con influencia atlántica. Las cepas son viejas, de más de 60 años, guiadas en vaso, y en el viñedo se entremezclan variedades tintas con blancas, como se estilaba antiguamente. Envejecido durante 12 meses en barricas usadas de roble francés.
