Lacima nace de uva mencía procedente de tres viñedos: de un viñedo de más 50 años, plantado a 400 m. de altitud en suelos de esquistos y pizarras fuertemente meteorizadas y con gran capacidad drenante; de un viñedo de 60-90 años, plantado a una altitud de entre 300 y 450 m. en suelo pizarroso; y de un viñedo de 50-80 años de edad, plantado a más de 500 m. Se recomienda decantar. Debido a que se ha embotellado sin filtrar, puede presentar residuos sólidos. Fermentación maloláctica en barricas. Envejecido sobre lías durante 20 meses en barricas de roble francés y, posteriormente, en botella durante 18 meses más.
