Valdespino se registró en 1875. En 1883 la Cámara de Valdespino se convirtió en un proveedor de Jerez de la Casa Real de España y en 1932, también se convirtieron en proveedores de Jerez de la Casa Real de Suecia. Tuvieron la idea de registrar la marca Sacristía en 1910. La Sacristía es el área en las salas de crianza, donde las mejores barricas de Jerez de la bodega envejecen. Otras bodegas ahora utilizan este término, pero es sólo Valdespino que tiene el derecho a utilizarlo. En 1999 pasó a formar parte del grupo Estévez.

The production region of D.O. Jerez-Xérès-Sherry is located in Exclusivamente Sanlúcar de Barrameda, Cádiz, España. Hasta 1964 se comercializó bajo la Denominación de Origen Jerez-Xérès-Sherry, reconociéndose posteriormente el carácter especial de la manzanilla dentro de los demás jereces.
