Empresa independiente y de carácter familiar que no tiene vocación de crecer en volúmenes sino en calidad y prestigio. Por ello, mediante acuerdo unánime del Consejo de Familia, toda la producción está limitada y numerada, lo que convierte a cada botella en una pieza única, al tiempo que garantiza la calidad y vejez de los productos. Hasta el 1752 no hay constancia escrita de tareas en la viña y bodega de Felipe Antonio Zarzana Spínola, antecesor de la compañía, que en 1729 había iniciado su actividad exportadora. Hoy con el paso de los años, «Ximénez-Spínola» ha renunciado a comercializar los vinos procedentes de otras tipologías de uva, para especializarse exclusivamente con la variedad Pedro Ximénez.
