El Callejuela Amontillado se elabora con uva palomino de viñedos propios. Se cría con el sistema de soleras y criaderas durante 12 años, combinando la crianza biológica y la oxidativa. Luce color ambarino con reflejos anaranjados y cobrizos. Nariz nítida e impactante de ebanistería y frutos secos con las notas salinas recordando la manzanilla en el trasfondo. Boca seca y glicérica, llena de matices; almendras tostadas, avellanas y sutiles toques de uva pasa y caramelo. Postgusto largo y herbáceo con un rastro de buena acidez que lo mantiene muy vivo. Seguirá creciendo. Envejecido durante 12 años mediante el sistema de soleras y criaderas.
