La vendimia se realiza manualmente en septiembre con las uvas al máximo equilibrio químico-organoléptico, y sucesivamente se efectúa el pillado suave y la decantación estática del mosto. La fermentación primaria se realiza en recipientes de acero entre 8ºC y 19ºC, con levaduras autóctonas selectas. El vino nuevo se conserva en sus «heces nobles» durante un mes, tras lo cual se filtra y se trasiega a las autoclaves para la toma de espuma. La fermentación secundaria se produce a 16ºC-18ºC, también esta con levaduras selectas, y dura entre 25 a 30 días, a los cuales sigue un período de unos días de maduración en las levaduras. Sucesivamente se pasa al embotellado y al reposo en la botella durante unas semanas.
