Este vino fue creado en 1988 en honor de Elizabeth Salmon, co-fundadora de la Maison Billecart-Salmon. Este vino, mariage de pinot negro y chardonnay, se caracteriza por su extrema delicadeza. Elaborado siguiendo el metodo tradicional, con un 20% del vino base fermentado en barrica. Envejece más de 10 años en las cavas.
