Estas soleras estaban destinadas al consumo propio de la familia, hasta que en el año 2008 el consejo familiar decidió autorizar la venta de una saca anual de 3000 botellas. Cada botella esta numerada y autentificada con la firma del presidente del consejo y exhiben las siglas de calificación de vejez: D.P.X.O. (Destilatum Petrus Ximenibus Optimum). Envejecido mediante el tradicional sistema de soleras.
