El Coto Mayor Blanco es un vino untuoso y elegante elaborado con un cupaje de uvas viura y sauvignon blanc provenientes de las laderas más frescas orientadas al norte, del viñedo conocido como Finca Carbonera, el más alto de la denominación, a 840 msnm. Allí, la altitud y la concentración de minerales permiten trabajar las variedades blancas con resultados de alta expresión y frescura. Tras macerar en frío el mosto y las pieles en pequeños depósitos, se prensan las uvas y el mosto fermenta a baja temperatura para conservar los aromas más delicados de la uva. Posteriormente, se trabajan las lías finas durante un mes para sumar un extra de untuosidad al cuerpo del vino redondeando así un vino complejo y aromático, pero también señorial. Tras su color amarillo verdoso, emergen los recuerdos de setos recién podados tan típicos del sauvignon blanc, combinados con los de fruta tropical y algún refrescante apunte cítrico. En boca se aprecian el buen trabajo con las lías y la delicadeza de su fermentación. Final afrutado, largo y delicadamente vegetal. Los prestigiosos premios que acumula El Coto Mayor Blanco (entre los que destacan un Baco de Oro) certifican su enorme calidad y su fantástico potencial gastronómico, que le permiten maridar con pescados y mariscos, pero también con arroces, pastas o carnes blancas.
