Gallaecia es un vino de cosecha tardía y sólo se elabora cuando la climatología de la cosecha lo permite. La primera añada fue en 1996, seguida de 1999, 2002 y 2004. La humedad en el mes de octubre, cuando podrían recolectarse las uvas tardíamente, es a menudo demasiado elevada y ello hace que la podredumbre gris se avance y ataque las uvas antes de que lleguen a su sobremaduración.
