Sassó es un complejo y trascendente monovarietal de xarel·lo de edición muy limitada elaborado bajo conceptos biodinámicos (Demeter). Es el reflejo de del respeto de su elaborador Rubén Parera con la cepa y su terruño, y el compromiso que ha adquirido con el territorio. Sassó tiene una crianza de 9 meses en barrica de acacia. Para la crianza sólo se emplean barricas usadas, con muy poco aporte tánico. La madera nueva dominaría la estructura y aromas del vino.
