Ilercavònia es un monovarietal de garnacha blanca procedente de la Terra Alta, región que en tiempos de los íberos estuvo habitada por la tribu de los ilercavons. Al igual que aquellos, los actuales habitantes de la denominación más meridional de Cataluña se sienten fuertemente arraigados a su tierra y a sus tradiciones, tales como el ball de la dansada (una especie de jota) o su uva predilecta: la garnacha blanca. Dicha variedad muestra todas sus virtudes en este vino de nariz fragante, fruto de una larga maceración pelicular. Su amplia boca se presenta vestida de sal fina, rasgo distintivo de muchos de los buenos blancos de la región. Delicados tonos amargos de fría mineralidad envuelven la madurez de la fruta (melón y pera), el hinojo silvestre y las flores blancas. Sus aromas abruman de manera muy positiva obligando a nuestros sentidos a esforzarse para conseguir abrazarlos por completo. En boca es puro equilibrio, la ecuación perfecta entre potencia y elegancia, complejidad y sutileza. Cremoso, fresco, intenso y suculento. Su recuerdo es largo y persistente, tanto que resulta muy difícil soltar la copa, así que recomendamos tomarlo acompañado de algún plato que potencie sus virtudes.
