Argentina lleva años ganándose a pulso una enorme reputación en el panorama del vino internacional. La uva malbec, olvidada en casi cualquier otro rincón del mundo (con la excepción de Cahors), ha catapultado los tintos argentinos hasta los más altos niveles de calidad. Sin embargo, a grandes rasgos, podríamos decir que sus vinos blancos son menos conocidos, quizás con la excepción de los aromáticos torrontés. El vino que aquí nos ocupa demuestra que Argentina no es sólo tierra de tintos y que otras muchas uvas pueden ofrecer vinos espléndidos en estas latitudes. El Enemigo Chardonnay es un vino sorprendente, con el que podrán deleitarse neófitos y expertos. Combina las mejores virtudes de la uva chardonnay, las barricas francesas y la crianza biológica con maestría, llevando el vino blanco de Mendoza a un nivel de complejidad insospechado hasta hace poco. Obtenido de cepas plantadas a 1500 m en los suelos calcáreos de Tupungato, El Enemigo Chardonnay fermenta con levaduras salvajes y descansa en barricas, al abrigo del velo flor en algunas de ellas, evolucionando y transformándose a sus anchas. Huele a frutos secos (avellanas y piel de almendras) y a fruta escarchada. En boca, la salinidad de la crianza biológica se deja sentir con sutileza sobre una base de cítricos confitados y algún tímido recuerdo tropical. Notas lácticas y tostadas envuelven un vino elegante, amplio y atípico que merece la pena catar con detenimiento, quizás con un lenguado a la meunière o un buen queso cremoso de cabra u oveja. Envejecido en barricas nuevas (35%) y seminuevas de 500 L de roble francés.
