Agustí Vilaret fundó las cavas Mont-Ferrant en 1865 en Blanes. En 1872 presentaron al Concurso Exposición de Barcelona su producción. Esta presentación demuestra documentalmente que Mont-Ferrant es el elaborador de cava más antiguo entre todas las empresas que componen el sector actual. The production region of D.O. Cava is located in La denominada región del Cava, que comprende fundamentalmente la comarca catalana del Penedés (provincias de Barcelona y Tarragona), donde se encuentra San Sadurní de Noya, el centro de producción más importante. El cava también se elabora en otros 159 municipios de España, de las provincias de Barcelona (63 municipios), Tarragona (52 municipios), La Rioja (18 municipios), Lérida (12 municipios), Gerona (5 municipios), Álava (3 municipios), Zaragoza (2 municipios), Navarra (2 municipios), Badajoz (1 municipio) y Valencia (1 municipio), que en su conjunto configuran la zona de producción denominada Región del Cava.
