Agustí Torelló Mata pionero, apasionado y trabajador incansable, en 1953 inauguró el primer laboratorio de análisis de vinos del sector, dirigió importantes cavas del Penedès y fundó su bodega en 1950. También fundó e impulsar la Cofradía del Cava que, años después, lo reconoció como Presidente de Honor.

The production region of D.O. Cava is located in La denominada región del Cava, que comprende fundamentalmente la comarca catalana del Penedés (provincias de Barcelona y Tarragona), donde se encuentra San Sadurní de Noya, el centro de producción más importante. El cava también se elabora en otros 159 municipios de España, de las provincias de Barcelona (63 municipios), Tarragona (52 municipios), La Rioja (18 municipios), Lérida (12 municipios), Gerona (5 municipios), Álava (3 municipios), Zaragoza (2 municipios), Navarra (2 municipios), Badajoz (1 municipio) y Valencia (1 municipio), que en su conjunto configuran la zona de producción denominada Región del Cava.
