Las tierras de Vinyes dels Aspres se encuentran en la parte oriental de la localidad de Cantallops, el pueblo de interior más al norte del Alt Empordà. Allí, a los pies del macizo de la Albera, los granitos y las pizarras se suceden entre suaves y rocosas ondulaciones del terreno. En este marco de incomparable belleza y crudeza, se encuentra la masía de Can Batlle, edificio del siglo XVII con una larga trayectoria en la elaboración de vino y aceite, incluso en la elaboración de tapones de corcho de los bosques de alcornoques cercanos. La Tramontana, fuerte viento del norte, sacude con intensidad las cepas esparcidas por las 30 ha de la propiedad familiar, sembradas mayoritariamente de las autóctonas garnacha y cariñena. Como no podía ser de otro modo, en Vinyes dels Aspres se intenta preservar la herencia respetando al máximo el medio ambiente, sin usar productos de síntesis. Fruto de estas buenas prácticas en el campo, la biodiversidad en estas tierras es muy rica y, animales como el Xot (mochuelo), pequeña ave migratoria que da nombre al vino, anida entre sus árboles. Después de una vendimia manual de uvas únicamente de la propiedad y de un reposo postfermentativo de 8 meses en barricas de roble de Allier, el Xot llega a nuestras copas con la fuerza de su paisaje. De oscuro y seductor color picota y aromas de sotobosque y especias frías (clavo). Envolvente, fresco, vibrante y mineral, adornado de seductores aromas de grosellas negras muy maduras, piel de mandarina y eucalipto. En boca destacan una perfecta acidez y un tacto aterciopelado, casi láctico. No dejan de asomar más y más aromas tras un buen aireado en copa: torrefactos, cacao, incluso dátil. Corpóreo e intenso desde la nariz hasta el postgusto. Envejecido durante 8 meses en barricas de roble francés Allier.

The production region of D.O. Empordà is located in La región de Ampurdán (Empordà), hasta 2006 denominada Ampurdán-Costa Brava, abarca la zona vinícola desde la Albera hasta la sierra de Rodas y la Garrotxa de Ampurdán, en España. El área de producción está distribuida en dos subzonas: 35 municipios al norte del Alto Ampurdán y 13 municipios al este del Bajo Ampurdán.
