The Steading es quizá uno de los vinos más importantes de esta bodega y sin duda el que mejor ejemplifica su trabajo de recuperación y protección de viejos viñedos. La uva con la que se elabora The Steading procede de viñas que sobrevivieron a la gran plaga de la década de 1980, y que no se vieron afectadas por la filoxera, algunas de ellas de más de un siglo de antigüedad. Las variedades (60% garnacha, 20% syrah y 20% mataró, como se conoce la monastrell en Australia) se vinifican por separado y se mezclan una vez que sus virtudes han sido bien evaluadas. El resultado es un vino generoso y flexible, con gran versatilidad. Un vino de aromas especiados y notas florales, con un toque de trufa, licoroso y de finas hierbas, jugoso, con una acidez refinada, elegante y muy bien estructurado. Envejecido durante 22 meses en barricas de roble francés y americano.
