La Azienda Agricola Cos nace en 1980 en Vittoria (Sicilia), por capricho de Giambattista Cilia y Giusto Occhipinti, ambos compañeros de colegio y arquitectos de profesión. Entregados con enérgica pasión a las viñas, decidieron subarrendar los viñedos de sus padres para poder llevar a cabo las vendimias y vinificaciones; sus primeros 20 hectolitros de vino los vinificaron a modo de amateurs. Cos se localiza en la punta extrema del sureste de Sicilia, en la provincia de Ragusa, donde el sabor de su vecina África resalta, ya sea por lo arquitectónico como por el cultivo de las vides, almendros, algarrobos y olivos. Las tierras nacen entre los ríos Iparri y Dirillo, descendiendo suavemente desde el Monte Iblei al Mar Mediterráneo. Afortunadamente, en Cos aplican técnicas ancestrales: la uva fermenta bajo tierra en un espacio donde hay 140 ánforas de 400 litros cada una. Y Frappato es sencillamente la delicia básica de Cos, un vino que enamora y en el cual encontrarán un excelente perfume de cerezas que recuerda a los míticos bourgognes (existe, de hecho, una hermandad entre las variedades frappato di vitoria y pinot noir). Las cerezas en licor (kirsch) y las frutitas del bosque se funden finamente en boca, ofreciendo un baile de sensaciones frías y metálicas de ligera consistencia. Envejecido durante 6 meses en ánforas de cerámica (50%).
