Tempranillo, Syrah. Crianza de 18 meses en barricas nuevas de roble francés. Aromas a frutas maduras, especiado, fina reducción. Todo está presente en la justa cantidad: alcohol, taninos y acidez. Sedoso, aterciopelado. Complejo y de gran volumen. Afincado en barrica con buena concentración. D.O.P. Pago Bolandin.
Apariencia: Tonalidad rubí profundo.
Nariz: Complejidad notable en la nariz, la liberación de aromas embriagadores de bayas negras silvestres, especias picantes, tabaco de pipa y taninos suaves.
Boca: Fino por excelencia, con taninos sedosos y brillantes, fruta limpia que hace equilibrio con la acidez tónico, notas minerales y saladas que añaden longitud y persistencia al retrogusto.
Maridaje: Ideal para acompañar carnes rojas de caza a la plancha o guisados de carne, carne de res, cerdo asado, cordero o cabra, y quesos maduros.
Época de vendimia: Primera semana de octubre. Cosecha: Manual en cajas de 15 kg en parcelas muy seleccionadas.
Maceración: Pre-fermentativa en frío a 5 º C durante 24 horas.
Elaboración y Crianza: Fermentación en pequeñas tinas de roble francés. Crianza mínima de 12 meses en barricas de roble francés procedentes del bosque de Allier.
