Normalmente Villa de Corullón es una selección de viñedo en propiedad en diferentes parajes pertenecientes al municipio de Corullón –San Martín, Fontelas, Valdafoz, Muria, Ferro y Moncerbal– y que suman un total de 10,5 hectáreas. Las cepas están plantadas sobre suelos heterogéneos con una parte inferior de roca pizarrosa de estructura laminar gruesa mayoritariamente del período cámbrico inferior. Un conjunto de laderas muy pronunciadas con exposiciones muy variadas según la parcela y a diferentes altitudes que oscilan entre los 500 y los 950 metros. Las cepas están podadas en vaso con densidades de 6.000 a 7.000 cepas por hectárea y edades que van de los 50 a los 90 años. Tras despalillarse, la fermentación-maceración se llevó a cabo en pequeñas tinas de madera con bazuqueos. Actualmente se está criando en foudres ovales nuevos y usados, en barricas de roble francés nuevas y usadas. Villa de Corullón está formado por un 91% de mencía y un 9% de variedades blancas como valenciana y jerez. Redondo, aromático y amable. Muy para beber. Finísimo. Producción de 28.000 botellas.
