Vara y Pulgar, vino tinto que toma su nombre de uno de los métodos de poda más populares en los viñedos de Jerez, es una verdadera rareza capaz de sorprender al más avezado catador de vinos. Está elaborado íntegramente con uva tintilla, una uva actualmente minoritaria en el suroeste español pero otrora ampliamente cultivada en Jerez. Como sucedió con muchas otras variedades, la filoxera arrasó con la casi totalidad de sus cepas, pero ahora, gracias a enormes trabajos de recuperación como el de Alberto Orte, podemos volver a gozar de una uva histórica en todo su esplendor. En los afamados suelos de albariza que Cádiz comparte con zonas tan reputadas como Champagne o Borgoña, la tintilla muestra su lado más elegante, sin excesos. La uva madura a la perfección y esto resulta en un grado alcohólico equilibrado y en una aromática sin sobremaduraciones, en vinos elegantes al tiempo que corpóreos y minerales. El Vara y Pulgar es un ejemplo magnífico de dichas virtudes. Elaborado con uvas ecológica de cepas plantadas en 1993 y criado en roble y cemento, deleita con un intenso color púrpura y una nariz especiada. En boca su tacto es sedoso y su tanicidad enérgica; una equilibrante acidez de frutillos rojos lo refresca mientras los aromas de violetas y pimientas lo decoran. En su largo y aromático final aparecen los recuerdos de chocolate negro y los de una fruta que parece tornarse negra. Mineral, denso y vivo, merece una buena decantación. Envejecido durante un total de 19 meses. Los primeros 12 meses en cuba de roble 40% y el 60% depósito de hormigón. Posterior crianza durante 7 meses más en barricas de roble francés.
