A pesar de su cercanía con el mar, los viñedos se encuentran a 400-800 metros de altitud, en la sierra prelitoral de Cataluña. Las cepas se internan en bosques de pino mediterráneo y conviven en un entorno salvaje con sotobosques aromáticos, donde habitan especies como el jabalí, la liebre y el águila perdicera. La joya de la corona de MontRubí es su Proyecto Gaintus, un plan de recuperación de la variedad Sumoll que se inició en el año 2000. La Sumoll es una uva históricamente autóctona de la zona, delicada y difícil de cultivar, condiciones que junto a la plaga de la filoxera de la vid a finales del siglo XIX hicieron que fuera desplazada por otras variedades foráneas. Este trabajo de recuperación dio a la bodega el reconocimiento como la primera bodega del mundo en elaborar vinos 100% Sumoll, siendo actualmente los mayores productores de Sumoll, dando a conocer esta magnífica uva en más de 15 países.

The production region of D.O. Penedès is located in La región catalana del Penedés, en España. Comprende 47 términos municipales en el sur de la provincia de Barcelona, y 16 términos municipales en la provincia de Tarragona. Se divide en tres subzonas: Penedès Superior, situada en el interior y en la montaña, con escasa producción debido a las condiciones de cultivo, pero de una gran calidad, Penedès Medio, situada al sudeste y la de mayor producción, y Penedès Inferior en la zona costera.
