En poco más de 10 años, Eulogio Pomares se ha convertido en uno de los jóvenes referentes de Galicia. A sus magníficos blancos de guarda, de su bodega familiar Zárate, ha ido añadiendo poco a poco un mosaico de microproyectos con vinificaciones fuera de normas. Penapedre vino de esperón es su tinto más salvaje. Procede de una parcela plantada con mencía, garnachas y jerez, vendimiadas y elaboradas en conjunto. De intenso color cereza, en nariz está marcado por frutas negras salvajes, arándanos, endrinas, ciruelas, zarzaparrilla y moras silvestres junto a un fondo ahumado, con notas de regaliz y especias dulces. En la boca se agarra con fuerza, con carácter y se desliza en sinfonía con una magnífica frescura de fruta. Delicioso y con una producción de unas escasas 2.014 botellas. Criado durante 12 meses en barricas usadas de roble francés.
