El Carlos Moro Prestigio se elabora con uvas de la variedad tempranillo procedentes de viñedos viejos de entre 35 y 80 años de edad, plantados en vaso sobre suelos frescos y calcáreos. Las ancianas cepas ofrecen escaso fruto, pero de calidad extraordinaria en un viñedo de marcada austeridad. Se realiza una poda especial a una yema con un potencial de producción máximo de 4.000 Kg por hectárea y la vendimia se realiza a mano en cajas de menos de 12 Kg. En bodega, previo enfriamiento en cámaras frigoríficas, la uva pasa por un doble proceso de selección (racimo y grano). La fermentación alcohólica tiene lugar en pequeños depósitos y tras ella tiene lugar la fermentación maloláctica en barricas de roble francés. Su posterior crianza trascurre en barricas de roble francés (80%) y americano (20%) de las mejores tonelerías del mercado, durante 18 meses, por lo que se embotella alrededor del mes de enero. El resultado es un vino de una intensa capa de color picota oscuro, brillante y con un gran aroma dominado por los recuerdos a cacao, frutas silvestres y especias delicadas como la vainilla. Complejo y voluptuoso en boca, con un intenso sabor y un tacto sedoso, de taninos redondos y perfecto equilibrio, el CM Prestigio es una nueva estrella en el firmamento tempranillo. Para la crianza sólo se emplean barricas nuevas, con alto aporte tánico.
