Francesc Grimalt (enólogo) y Sergio Caballero son unos apasionados de las variedades locales de Mallorca y se les conoce por su fidelidad y dedicación al entorno y al viñedo: estudian las plantas, los suelos, seleccionan, recuperan... con el objetivo de potenciar lo que es mejor para la uva, para que ésta pueda reflejar su identidad de la forma más auténtica y natural. Su nuevo vino toma sus apellidos como nombre y está elaborado con uva callet (90%) y fogoneu, a partir de cepas de entre 40 y 50 años de edad, cultivadas ecológicamente, con la mínima intervención, sobre suelos francos-arcillosos en las fincas Vinya Petita (0,34 Ha) y Vinya Ermassos (0,6 Ha). Pretenden con él ofrecernos su interpretación más personal de la callet: una uva rica en sensaciones de violeta y notas minerales (fósforo, especialmente). Un vino muy fresco, sutil, refinado y completo. Su precio no es de los más asequibles, pero su limitada producción, 1.000 botellas, tampoco permite mucho tiempo para pensárselo.
El vino de referencia de Francesc Grimalt y Sergi Caballero en Mallorca. Exclusivamente callet, cultivada con la mínima intervención, plantada sobre suelos de «call vermell», una tierra franco-arcillosa rica en óxido de hierro que ofrece vinos complejos y de guarda. Como es habitual, la etiqueta cambia con cada añada. Se han elaborado 16.000 botellas y 300 magnums. Envejecido durante 14 meses en barricas nuevas de roble francés Allier.
